INGREDIENTS:
- 800 g medium-sized potatoes
- 2 onions
- 8 stems of chives
- 4 tbsp oil
- 6 tbsp apple cider vinegar
- 0.5 tsp salt
- pinch of pepper
- 3–4 tbsp olive oil
METHOD:
Boil the washed potatoes with their skins on in salted water for some 30 minutes or until tender. Cool the potatoes, peel, and cut into thin slices. Slice one of the onions into thin rings, and finely chop the second onion, adding in the chopped chives. Add the onions and chives to the bowl and mix with the potatoes. Mix the salt, pepper, vinegar and olive oil and then coat the potatoes, giving them a few minutes to soak up the dressing. You can also add vegetables, fruit or nuts of your choice. The only limit is your imagination!
